Originally from Brazil and Mexico, tapioca has become a staple product in Southeast Asia. In Singapore, it has become naturalised, becoming part of her flora. The young leaves are often blanched and eaten as salad, while its tubers are boiled as carbohydrate staples. Many oral history accounts of World War II recount how tapioca became a key substitute for rice during food shortages in Singapore.
